Where ancient wisdom meets modern wellness
Seven days of anti-inflammatory Mediterranean diet and renewal on the Camino de Santiago — with an optional fasting-mimicking experience for those seeking deeper transformation.
Apply Now"Seven days of stillness, nourishment, and renewal — held by the ancient stones of Navarra."
A Baroque palace rises in ashlar stone on the Camino de Santiago in the Merindad de Estella. Three noble coats of arms — spanning the 17th and 18th centuries — are carved into its facade, bearing witness to the families who called it home.
The palace becomes the seat of the Sindicato Agrícola Católico — the Catholic Agricultural Cooperative. The inscription beneath the cornice still reads its name, a quiet record of the community life that once filled these halls.
Recognised and protected by the Institución Príncipe de Viana — declared the most monumental example of civil architecture in the entire Merindad de Estella. A heritage that belongs not to one family, but to Navarra itself.
Born in Desojo, a village just 5 km away, José María Leuza spent years patiently restoring the palace with passion and care. He opened its doors to pilgrims walking the Camino de Santiago — returning the building to its truest purpose: a place of welcome and rest.
The ancient stones now hold space for something new. A week of genuine Mediterranean nourishment and longevity nutrition — with an optional fasting-mimicking programme for those seeking deeper transformation — finds its home here, in a place shaped by centuries of passage, care, and beginning again.
The retreat lasts 7 days and is open to everyone — whether you are looking for a gentle reset or simply want to nourish yourself well and slow down.
All guests share the same beautiful experience: Mediterranean longevity meals, daily guided visits to Navarra's most stunning villages and olive groves, nature walks, nutrition workshops, and the warmth of a small, intimate group.
At the heart of the retreat is genuine healthy eating — anti-inflammatory, plant-rich Mediterranean food inspired by the Mediterranean Diet. You will lose weight naturally, learn to eat differently, and leave with new habits that last.
For those who wish to go deeper, there is an optional 5-day fasting-mimicking programme — a structured nutritional programme inspired by the scientific research of Prof. Valter Longo on the Fasting Mimicking Diet. It reduces calories, proteins and sugars with scientific precision — triggering a fasting-like metabolic state while allowing you to continue eating. This approach can support:
Set in the historic Palacio de Sansol (1702), a beautifully preserved stone palace nestled on the Camino de Santiago in the rolling hills of Navarra.
Autumn in Sansol is pure paradise — golden vineyards, crisp mountain air, and a magical quality of light that can only be found here. A complete experience, open to anyone who wishes to reset and reconnect with what matters most.
Meals are gathered around one long table inside the palace — slow, warm and unhurried. Eating together is part of the experience: conversation, connection and the simple pleasure of real food shared with others.
Five days of a fasting-mimicking programme within a carefully designed 7-day journey. The day before and the day after follow a specially adjusted Mediterranean diet — preparing your body to enter and exit the protocol gently and safely. Eat, reset and renew at a cellular level.
Includes: 7-day structured nutrition plan · 5-day fasting-mimicking programme · personalised guidance · scenic walks · group movement · daily guided visits
A full week of genuine anti-inflammatory Mediterranean diet — plant-rich meals designed to help you lose weight naturally and build lasting healthy habits.
Includes: Mediterranean diet meals · nutrition workshops · scenic walks · group movement · daily guided visits
Plant-rich, anti-inflammatory meals built around seasonal vegetables, legumes, whole grains and generous Navarran olive oil — cooked with care and eaten without counting, rules or deprivation.
Soft morning movement and quiet moments in nature — space to breathe, reflect and arrive fully in the landscape of Navarra.
No two days are exactly the same, but most follow a rhythm that quickly feels natural.
The morning begins at your own pace. Breakfast comes first — unhurried and nourishing. The two groups sit at separate tables, each eating according to their own programme, but in the same calm space and the same morning light.
After breakfast, a gentle movement session — outdoors when the weather allows — helps everyone ease into the day.
On some days, Cristina and David lead the group out into the surrounding countryside — to a medieval village, an ancient monastery, the olive groves of Navarra, or along a stretch of the Camino. Some excursions include a simple lunch outdoors. Others return to the palace in time for a relaxed afternoon.
On workshop days, guests gather for one of three sessions held during the week. Ruth leads two of them — one on the foundations of Mediterranean nutrition and the everyday food choices that support long-term wellbeing, and one on the principles behind a fasting-mimicking programme and how it is designed. The third is a conversation with Manuel Román on the olive, its bioactive compounds, and its place at the heart of Mediterranean longevity.
The afternoons are free. Some people read in the garden, others go for a walk, take a nap, or simply enjoy the quiet of the palace.
In the evening, everyone comes back together for dinner. Afterwards, there is a sharing circle — a chance to talk about the day, listen to others, or simply sit and be part of the conversation.
By the end of the day, most people are genuinely tired — in a good way. The walks, the fresh air and eating simply all help. Most guests sleep well here, often better than they do at home.
Break unhealthy eating patterns and give your body the deep reset it has been asking for.
The palace sits on one of the world's most iconic pilgrimage routes, at 500 metres above sea level — gentle enough for everyone, yet surrounded by breathtaking nature, golden vineyards, ancient olive groves and a silence that is increasingly rare in the modern world.
Leave with practical tools, knowledge and habits that will serve you long after the retreat ends.
You will be accompanied throughout by a dedicated team: Ruth, biologist specialised in nutrition, fasting and longevity; Cristina, local expert and guide to Navarra's most beautiful corners; Manuel, specialist in olive oil production and the sustainable valorisation of the olive sector; and David, who supports the team across logistics, kitchen and movement sessions.

Host & Guide
Biologist · Mediterranean Nutrition, Fasting & Longevity
Ruth Stirati is an Italian biologist who has lived in Italy, Germany and Spain, and speaks Italian, German, English and Spanish fluently.
Her life has been shaped by movement: between countries, cultures and the paths of the Camino de Santiago, which she has been walking since 2019.
Her Italian roots and lifelong relationship with Mediterranean cooking are not just a background — they are the foundation of her belief that eating well and eating joyfully can belong together.
After losing her sister to cancer in 2021, Ruth began to explore nutrition with a deeper personal focus: nourishment, balance, inflammation and longevity. Since then, she has continued her training in Mediterranean nutrition and fasting-inspired approaches, with a special interest in healthy ageing and everyday prevention.
This personal journey — from grief to science, and from science to daily practice — is at the heart of everything she brings to the retreat.
At the retreat, Ruth designs and prepares all meals. Both the Mediterranean programme and the optional fasting-mimicking menu are cooked and curated by her with care, simplicity and respect for the body.
She guides guests through the principles of Mediterranean eating and leads gentle morning movement sessions to help begin the day with presence and ease.
Since April, Ruth has also been living at Palacio de Sansol as hospitalera, welcoming pilgrims on the Camino de Santiago together with David.

A carefully structured 5-day nutritional journey, inspired by the science of fasting mimicking — guided every step of the way
Each day is carefully calibrated — drag to explore the full journey
Your body begins shifting from glucose to fat metabolism. Higher calories ease the transition while still activating longevity pathways. This is the last "generous" day — savour it mindfully.
Autophagy begins activating. Minimal protein keeps IGF-1 low. Many feel a wave of tiredness — this is the body redirecting energy inward. Rest, walk gently, breathe through it.
Stem cell regeneration begins. The fog often lifts mid-day and a remarkable clarity emerges. This is your body's ancient renewal system awakening — the most transformative moment of the cycle.
Peak autophagy window. Old, damaged cells are cleared. Many experience heightened senses, vivid dreams, and deep emotional clarity. The ancient hills of Navarra take on a luminous quality.
Stem cell activation peaks. New cellular generation begins. The body is preparing for reintegration — an extraordinary phase of biological renewal that science is only beginning to fully understand.
The final fasting day. Your cellular landscape has been renewed. Tomorrow begins a gentle reintroduction — you emerge from this day profoundly different at a biological level.

Every layer of hunger, explored — click each card to understand it
Physical, biochemical
tap to discoverThe true biological signal — an empty stomach, low blood sugar, the body's genuine need for fuel. During the programme, this hunger is intentionally modulated. The retreat guides you to sit with it, breathe through it, and recognise it as a signal of healing rather than emergency.
PhysicalVisual, sensory
tap to discoverTriggered by the sight of beautiful food. A passing restaurant window, a beautifully plated dish. During the protocol, Ruth guides you to transform this impulse: beauty becomes mindful appreciation rather than a trigger to consume.
SensoryOlfactory, aromatic
tap to discoverThe smell of bread baking, coffee brewing, garlic in olive oil — olfactory hunger bypasses rational thought entirely. The fasting protocol makes your sense of smell extraordinary. You will learn to savour scent as nourishment itself.
SensoryTaste memory, texture
tap to discoverThe craving for a specific texture or taste — the crunch of crackers, the creaminess of almond butter. Often rooted in childhood food memories. During the protocol, this hunger reveals your deepest food associations, many of which are emotional rather than physical.
PsychologicalComfort, stress response
tap to discoverThe most prevalent and misunderstood hunger. Loneliness, stress, boredom, anxiety trigger the same neural pathways as physical hunger. Without food as a coping mechanism, emotions surface fully. The retreat creates a safe container for this profound inner work.
EmotionalHabitual, clock-driven
tap to discoverHunger triggered by the clock — "it's noon, so I must eat." Or the habitual reach for a snack. This is programmed behaviour rather than biological need. The fasting-mimicking programme gently decouples you from clock-based eating and rewires your relationship with hunger cues entirely.
HabitualConnection, belonging
tap to discoverEating because others eat — at dinners, gatherings, celebrations. Food as social glue. The retreat transforms this: a group of fasting people creates a different kind of communion. Sharing tea, stories, and silence becomes the new social meal.
SocialMeaning, love, fulfilment
tap to discoverThe deepest non-physical hunger — for love, purpose, connection, meaning. When we eat to fill a heart-shaped hole, no amount of food satisfies. The fasting-mimicking programme creates stillness in which this deeper hunger can finally be heard and addressed at its true source.
ExistentialThe +1 — deep autophagy signal
tap to discoverThe hidden ninth hunger — the body's own cells calling out for renewal. Autophagy is the cellular "hunger" that cleans out damaged components and regenerates from within. This is what the fasting-mimicking programme is designed to activate. It cannot be satisfied with food — only with the profound emptiness of the fasting state.
The ScienceWhen caloric intake drops below a critical threshold for 2–3 days, cells activate their internal recycling system. Damaged proteins, dysfunctional organelles, and even pre-cancerous components are broken down and repurposed as cellular fuel. This is the Nobel Prize-winning discovery (Yoshinori Ohsumi, 2016) that underpins the entire fasting-mimicking programme.
By days 3–5, the body's own stem cells are activated in response to the metabolic stress signal. When normal eating resumes, these stem cells differentiate into new tissue — immune cells, gut lining, neurons. USC studies show significant regeneration of immune system components after a single 5-day cycle, particularly impactful for those recovering from illness or aging-related decline.
The protocol drives dramatic reductions in IGF-1 (insulin-like growth factor) and fasting insulin — the hormonal axes most strongly linked to accelerated aging and metabolic disease. Simultaneously, ketone production rises, providing clean fuel for the brain and heart. The combined effect is a full metabolic recalibration that persists for weeks after the protocol ends.
Every calorie is chosen for its precise biological signal value
Every sensation has a biological meaning — there is nothing to fear
Glycogen depletion triggers mild head tension. Drinking more water and adding a pinch of sea salt to your broth usually resolves this quickly.
Your mitochondria are transitioning from glucose to fat metabolism. This is temporary — rest, walk gently in Navarra's hills, and trust the process.
Blood sugar stabilisation causes emotional fluctuations. Daily check-in sessions address this directly — you are not alone in what you feel. The retreat holds space for this with great care.
Ketone production begins feeding the brain cleanly. Many participants report this as the most profound day — a sudden, luminous clarity that arrives mid-afternoon.
Without the sedative effect of food, feelings surface more clearly. This is a gift, not a problem. The retreat holds space for this with great care.
Ketone-fuelled cognition is remarkably clean. Many describe writing, reading, and creative work as flowing effortlessly during these days.
Fat adaptation is complete. Your body runs efficiently on stored reserves — ancient metabolic wisdom that our ancestors used daily.
Authentic feeling — unexpected insights, tears, laughter, gratitude. A profound sense of having returned to something essential in yourself.
Yes — black coffee (no milk, no sugar) is permitted and actually supports the fasting state. Caffeine mildly enhances autophagy and provides mental alertness during the transition days. Limit to 1–2 cups before midday to avoid sleep disruption during the protocol.
Light movement is encouraged — gentle walks on the Camino, yoga, slow swimming. Intense exercise is not recommended during Days 2–4 as the body's energy is directed toward cellular renewal, not athletic performance. By Days 5–6 you may feel the urge to move more freely — honour that gently.
We distinguish between discomfort (normal and expected) and genuine illness. Mild headache, fatigue, irritability = normal. Severe dizziness, heart palpitations, extreme weakness = signal to stop. Your guide is with you throughout the retreat and will help you navigate this with care.
Contrary to conventional fasting concerns, the fasting-mimicking programme is specifically designed to preserve muscle. The careful macronutrient balance and caloric threshold keep the body from catabolising muscle tissue. The stem cell activation in Days 3–5 actually supports lean tissue regeneration post-protocol.
The programme is designed for healthy adults up to approximately 70 years of age. It is not suitable for: pregnant or breastfeeding women, people with a history of eating disorders, those on insulin or with Type 1 diabetes, people with serious cardiac, hepatic or renal conditions, anyone with a BMI below 18.5, or those under 18. Medical supervision is recommended for anyone taking regular prescriptions, managing a chronic condition, or undergoing oncology treatment. If you are over 65 or have any existing health condition, please contact us before booking — we will help you assess whether this programme is appropriate for you.
Research suggests 2–4 cycles per year for healthy individuals seeking longevity benefits. We recommend beginning with one retreat cycle to understand your body's response, then calibrating frequency based on your health goals. More is not always better — benefits compound with proper recovery between cycles.
Consult your physician before the retreat about any prescription medications. Most medications can continue — but some (particularly blood pressure or blood sugar medications) may need dosage adjustment as the protocol produces significant physiological changes. Participant health profiles are reviewed before each retreat.
The protocol is broken by: animal protein (immediately raises IGF-1), added sugars, alcohol, or total calories exceeding the day's threshold. The protocol foods are specifically chosen to remain below the biological "fasting trigger."
Day 6 is a refeeding day — as important as the fast itself. Aim for 20–30g of protein per meal, and avoid added sugars, white flour, ultra-processed foods, and alcohol. Focus on whole foods: legumes, vegetables, eggs, fish, and wholegrains. What you eat in the days after the programme shapes how deeply your body consolidates the benefits — treat it as part of the protocol, not an afterthought.
The retreat offers far more than the protocol alone. Guided visits to Navarra's monasteries and villages, walks along the Camino de Santiago, morning movement sessions, and evening sharing circles create a rhythm that the protocol alone cannot provide. Nutrition workshops help you understand what your body is doing and why. The company of fellow participants — all moving through the same experience — adds depth that no home kit can replicate. The protocol is a set of instructions. The retreat is an experience. That is the difference.

Inspired by the eating habits of the world's longest-lived populations
This programme is designed for participants who choose not to follow the Fasting Mimicking Diet during the retreat. While the fasting mimicking diet is a short-term nutritional intervention with specific metabolic goals, the anti-inflammatory Mediterranean diet is a sustainable way of eating that can be maintained for life.
The approach is based on decades of research into healthy ageing and on the traditional eating habits of some of the world's longest-lived populations, including those of Sardinia, Okinawa and Loma Linda. Despite living in different parts of the world, these communities share surprisingly similar dietary patterns: meals built around vegetables, legumes and whole grains, healthy fats from olive oil and nuts, modest amounts of fish, very little sugar and almost no processed food.
During the retreat, we will follow these same principles while enjoying the landscapes, traditions and local products of Navarra.
One of the reasons this way of eating attracts so much scientific interest is its effect on chronic low-grade inflammation. Unlike the inflammation that appears after an injury or infection, this type of inflammation often goes unnoticed. Yet it is increasingly associated with many of the chronic conditions that have become common in modern societies, including cardiovascular disease, type 2 diabetes, obesity and cognitive decline.
Of course, food is not the only factor involved. Stress, sleep, movement and our environment also play an important role. However, what we eat every day remains one of the most powerful influences on our long-term health.
The meals served during the retreat are designed around these principles. You will enjoy abundant seasonal vegetables, legumes as the primary source of protein, whole grains, nuts, seeds and generous amounts of extra virgin olive oil. Fish will be served two or three times during the week, providing valuable omega-3 fatty acids and vitamin B12. Herbs and spices such as rosemary, oregano, parsley, garlic, ginger and turmeric will be used regularly, both for flavour and for their well-known health benefits.
We are particularly proud to use Ecoprolive extra virgin olive oil, produced here in Navarra, in the same landscape of vineyards, olive groves and rolling hills that you will explore during your walks.
Meals will be enjoyed within a balanced daily eating window, another habit commonly observed in long-lived populations and increasingly supported by scientific research. At the same time, there will be no calorie counting, no complicated rules and no sense of deprivation. Good food should be one of life's pleasures.
Many people lose weight naturally during the week — often without trying — simply as a result of removing processed foods, eating more nutrient-dense meals and allowing the body's natural hunger and satiety signals to function properly again. Others notice improvements in digestion, better sleep, fewer cravings, more stable energy levels and greater mental clarity. While every person responds differently, positive changes often occur surprisingly quickly.
Most importantly, this retreat is not about following a programme for one week and then returning to old habits. Through nutrition workshops, shared meals and informal discussions, you will learn the reasoning behind the recommendations and gain practical tools that can easily be applied at home.
Our goal is not to give you another diet to follow. It is to help you understand how everyday food choices influence health, energy, weight and longevity, and to show that eating well can be both deeply nourishing and genuinely enjoyable.
Ecoprolive is born in Puente la Reina, Navarra — a medieval pilgrimage town just 30 minutes from Palacio de Sansol. The olive groves that produce these olive by-products grow in the same ancient landscape where you will walk, breathe, and renew.
The Arróniz olive variety — native from Navarra and found nowhere else in the world — forms the heart of Ecoprolive's blends. Combined with early-harvest Picual and Cornicabra olives results in an AOVEs Extra Virgin Olive Oil with high levels of oleocanthal and polyphenols, which has been placed among the 5 healthiest oils in the world on 5 occasions, achieving 1st place worldwide in 2025.
Their patented innovation removes the olive pit before pressing — a revolutionary technique that eliminates oxidation risk, requires no filtration, and produces an oil of unparalleled purity. The result: 40 times the antioxidant content required by the European Food Safety Authority.
In addition, the patented and exclusive Ecoprolive process results in a 100% natural olive prebiotic, PreBIOphenol that promotes the nutrition of the microbiota (intestinal flora), improving irrigation and avoiding excessive formation of free radicals thanks to the antioxidant effect of polyphenols
Arróniz and Picual olives are harvested at optimal ripeness — earlier than any other producer — maximising polyphenol concentration
The patented process removes the olive pit before pressing — the world's only oil produced this way. No oxidation. No filtration needed
Pure cold extraction at low temperature preserves every polyphenol, antioxidant and oleocanthal compound in its natural state
No filtering, no additives, no water. The oil settles naturally, retaining its characteristic living texture and depth of flavour
Every part of the olive — pulp, pit, skin — is transformed into PreBIOfenol supplements. A closed-loop process with 70% less carbon footprint
Walk the ancient olive groves of Navarra at the edge of the retreat landscape. The producers guide you through the groves at dawn — explaining the soil, the Arróniz variety, the rare chemistry that makes this oil the healthiest in the world.
In late October, join the ultra-early harvest at its most alive moment — handpick Arróniz olives alongside the Ecoprolive team in the crisp autumn air of Navarra. An experience you carry home in your hands and in your body.
Watch — and taste — the cold-press pit-removal process that makes this oil unique in the world. From freshly picked olive to living gold. The pressing room in October smells like nothing else on earth.
Studied at the University of Navarra and recognised by the European Commission as a breakthrough in healthy food innovation — this is not just oil. It is medicine, grown in the same ancient soil you walk during the retreat.
October retreats include the olive harvest experience. All retreats include plantation visits and guided tastings.
